As I prepare for the biggest endurance ride of my life, I plan to track what I eat, my favorite dishes, and how my body reacts.  If you have suggestions, recipes to share or other thoughts, I'd love to hear them.

I have had my share of bars - granola, Luna, long-lasting, you name it.  As a T1D, they serve their purpose depending on the type of ride I'm doing. One of my favorite go-to foods for quick rides is tortillas with peanut butter and strawberry jam.  When I whip those out, my fellow riders all get jealous.
